This potato soup recipe is just what you need on a chilly day! It is super simple and only uses one pot, so the clean up is minimal. It takes about 30 minutes to prepare and will serve six. Take comfort food to a whole new level when you make this creamy, cheesy potato soup!

  1. Put the bacon into a large Dutch oven or soup pot over medium heat. Cook until crisp and browned.
  2. Remove bacon pieces and set aside. Leave the fat inside the pot.
  3. Add butter and chopped onion and cook over medium heat until the onions are tender. This should take 3-5 minutes.
  4. Add garlic and cook until fragrant. This should take about 30 seconds.
  5.  Sprinkle in flour over the ingredients inside the pot and stir until the mixture is smooth. Use a whisk if needed.
  6. Add diced potatoes along with chicken broth, milk, heavy cream, salt, pepper, and ancho chili powder. Stir together.
  7. Bring the mixture to a boil and cook until the potatoes are tender. This should take about 10 minutes.
  8. Reduce to a simmer. Pour about half of the soup into a blender to puree it. Once that is finished, add it back with the rest of the soup and stir together.
  9. Add sour cream and bacon to the soup. Allow this to simmer for 15 minutes before you serve.
  10. Top it off with sour cream, bacon, chives, and shredded cheese of your choosing!
